Sauce eggplant
Very original addition to grilled vegetables or just baked or boiled vegetables. Pepper, potatoes, blue, apples and many other vegetables will sparkle with new flavor under the sauce.

Ingredients

  • Eggplant

    2 piece

  • Tomato

    2 piece

  • Cilantro

  • Dill

  • Garlic

    2 tooth

  • Onion

    1 piece

  • Sunflower oil

    2 Tbsp

  • Tomato juice

    150 ml

  • Black pepper

  • Salt

  • Lemon

    1 tsp

Pierce eggplant with a knife and bake until tender I do this in the microwave, the time is 5-7 minutes, but can be in the oven.

Onions clear, I prefer blue, it is milder in taste. On pomidorok to make a cruciform incision, pour boiling water, leave for a few minutes and remove the skin.

Peel a garlic and coriander, dill and onion a little crushed, of course, you can use other greens.

The flesh of the eggplant, tomatoes, onion mix, add the lemon juice, garlic, add the herbs, sunflower oil (must be refined), salt and pepper to taste.

And in the end make a thinner consistency of the sauce by using tomato juice.

Try! Of course, you can add the sauce of your favorite spices. I have the photo in a platter roasted pepper, blue and Apple (before baking just salt). Bon appetit!
