The Kannel
Canele (cannele) is incredibly tasty confectionary miracle. Originally from France (Bordeaux), it conquered the hearts of sweet lovers around the world. Sweet, fragrant, with hints of vanilla rum, soft and creamy inside and crisp-viscous outside. This dessert I want to give Natasha (FoodStation1)

Ingredients

  • Milk

    250 g

  • Brown sugar

    125 g

  • Flour

    60 g

  • Butter

    25 g

  • Chicken egg

    1 piece

  • Yolk egg

    1 piece

  • Vanilla

    0.5 piece

  • Rum

    1 Tbsp

  • Salt

In a saucepan, mix the milk, half the sugar, vanilla seeds and the pod. Heated the milk to almost boiling point.

Remove from heat and add the butter. Set aside and allow to cool a little.

The remaining half of the sugar combine with flour and a small pinch of salt.

In a separate container mix eggs and yolks. The main thing - not to beat. The less air gets into the dough, the better.

Combine with flour, gently stirring with a whisk. Then we introduce the warm milk mixture (without the pod). As gently stir, not whisking. In the end add the rum. Filter the resulting dough (it looks like a pancake batter) and return it in the vanilla pod. Close the lid and put the dough in the refrigerator for at least 12 hours. Ideally, day.

The next day, an hour before will be the oven, take the dough out of the fridge. A little (minuscule) grease the ramekins with butter. Fill their dough, leaving 1 cm unfilled. Put in a preheated 200°C oven and bake for about an hour. When the dough is poured into moulds and lightly stir the mixture, but to no bubbles.

The Kannel should be very rosy, caramel. As soon as crust color will be caramel, rich, the Kannel is ready. Now there are two options to keep them cool. The first — directly in the form, then the crust will be soft and malleable.

Or remove them from the form - the crust is crunchy. I immediately pulled out and cooled. I really liked the contrast of crunchy crust and soft, creamy middle. It is very tasty! Bon appetit!
