Catalan candy
Catalan candy - Catànies, the Catalan brand, invented half a century ago, the Catalan pastry chef Josep Cudié. Because on hand I didn't have almonds, I replaced it successfully for hazelnut. Candy awesome, I must say! Hand and reaching for the next.

Ingredients

  • White chocolate

    100 g

  • Butter

    20 g

  • Hazelnuts

    100 g

  • Sugar

    50 g

  • Chocolate milk

    70 g

Nuts grind in a blender (I in a coffee grinder) (the hazelnuts I pre-fried until Golden Bochkov, so I think the more intense flavor)

Sugar melt in a heavy-bottomed pot (the sugar quickly turns brown, you need to be careful not to burn through it)

In the hot sugar add the nuts, mix well. Spread on paper to cool

The cooled mixture grind in blender into fine crumbs. Pralines are ready

White chocolate with butter to melt in a water bath

A spoon pour the praline in the chocolate-butter mixture

Until then, until the mixture becomes thick. If the mixture get crumbly, add the chocolate. If the liquid add Cup chopped nuts

Hands to form candy (I got 12 pieces). Inside each candy is sure to put a nut. Put into the refrigerator for some time. I put it in the freezer for 10 minutes.

Melt milk chocolate (I heated in the microwave). Each piece "to bathe in chocolate." Put into the refrigerator for 15 minutes. Then decorate (this is optional) (I did strips of white chocolate). You can roll the candies in cocoa or sprinkle with grated waffles.
