Cooking

step-0
The peas need to cook according to the instructions on the package. If necessary, pre-soak in cold water overnight. I had a "pea halves, without pre-soaking", so I just added a pan of water. Ratio: 1 part peas and 3 parts water and boiled for 1 hour, until tender. Do NOT add salt!
step-1
Onion cut into small cubes, and mushrooms - plates. (I used brown mushrooms - they are fragrant, but you can use other mushrooms) Heat butter (vegetable) oil in a frying pan and lightly fry the onion first, then add the mushrooms and fry everything together until the liquid evaporates. Remove from the heat.
step-2
Ready chickpeas drain in a colander and rinse it with cold water. Measure out 4 tbsp of cooked peas into a separate bowl and blend them together with creme fraiche or very thick sour cream. Peas here is a thickener for gratina. If the cream is not very thick, just reduce the amount of 80-100 ml.
step-3
Parsley leaves are finely chopped. Ham or other cooked ham (I used ham to Prosciutto) cut into thin strips. Ready to mix the remaining peas with the parsley, ham and mushrooms, add sour cream and pea sauce. And only after that - well salt and pepper!!!
step-4
Ceramic molds lightly grease with oil, put the mixture and sprinkle a little grated cheese. To close the form with a lid or with foil and place in a preheated high oven for 15 min. then remove cover (foil), reduce the heat to 180*C, sprinkle again with grated cheese and bake until cheese it will turn brown.
step-5
This gratin recommended to serve with a salad of fresh vegetables.
step-6
Bon appetit! Cook with gusto!
