Belarusian friedge
This is a very fresh, fragrant and colorful soup with the bright taste of summer. The ingredients are simple and inexpensive, and in combination give such a wonderful, refreshing and healthy dish. Friedge, as its name implies, should be served very cold. Put on the table a bowl of ice so everyone can make your soup even colder.

Ingredients

  • Beets

    6 piece

  • Cucumber

    3 piece

  • Green onions

    1 coup

  • Dill

    1 coup

  • Parsley

  • Chicken egg

    6 piece

  • Sour cream

    250 ml

  • Vinegar

    4 Tbsp

  • Water

    3 l

  • Salt

  • Sugar

    1 tsp

1. Boil the beets until tender, boil hard-boiled eggs. 2. Clean the beets and eggs. With cucumbers remove the skin.

3. Separate eggs into whites and yolks. Beets, cucumbers and proteins RUB on a coarse grater. Onion, dill and parsley finely chopped.

4. Lay out the greenery (including the bow) and the yolks in a bowl, sprinkle with salt and thoroughly knead all with the pestle.

At this stage you will feel the fresh smell of summer and this wonderful soup.

5. Mix all ingredients in a large saucepan, add sour cream, vinegar, salt, sugar and mix everything properly.

6. Gradually add water – more if you prefer a thinner soup, less if you like thick. Add salt and vinegar if necessary. Belarusians eat this soup with baked potatoes or bread.
