Pelmeni Siberian
Traditionally Russian dish, familiar to us from childhood, only in the HOME version. For his beloved family, even time is not a pity, and it will go away is not enough, you too, believe me! But it's worth it! If you follow strictly the recipe, it will always, I guarantee 100 %.

For the dough, take 2 cups flour, sifted necessarily (depends on the quality of the test), add in the flour 0,5 tsp salt, make a funnel, carefully pour in the 0.5 Cup of ice water (this is mandatory), beat 1 egg and gently knead the dough. The dough should pick up all the flour, knead until the dough will not lag behind the hands.

But while the dough rests, we make the filling, i.e. stuffing: beef and pork them on the grinder 1 (!!!) times on a large grill, along with onions and garlic cloves. Salt, definitely pepper, optionally add a pinch of nutmeg. Parsley puree them and add to the mince. Mandatory moment is water, 60 gr. cold water added to the meat at the end (for juiciness). All mix well. Still, the important point is that the mince should be well salted, don't think dosolit dumplings when cooking, depends on the flavor. Salt from the meat, because it depends on the taste of the juice that will be inside the dumpling, it should not be fresh!!!

When everything is ready (and filling and the dough), start to sculpting. Test cut a piece, roll it with a rolling pin and a small glass cut out circles. I just say, I basically don't use the form for dumplings, though I have one, I love beautiful products, hand made from A to z, and so the whole process take. Do not use never purchase beef, make it yourself!
