For the marinade mix all ingredients. Clean the zucchini and using a mandolin cut it into thin long strips. Put strips in a shallow, but large capacity, pour the marinade, stir and leave for 5 minutes. Meanwhile, pre-heat the grill pan. The pan I didn't grease because it is a part of the marinade.
Quickly fry each strip from both sides in a hot grill pan. The roasting of each batch in fractions of a second! And I will say that this option delicious, but moving on!
Spread the sauteed zucchini on a Board and let it cool down completely. Meantime, prepare the filling for rolls. Put in the blender seeds, nuts, ricotta, garlic, mint leaves and turn on the processor. In the grinding process add the olive oil and, if necessary, water.
Stop the blender, season with ground salt and pepper to taste. Turn on the blender for a few seconds. The stuffing is ready!
Lay on the working surface of a ribbon of zucchini, spread the filling, about half a teaspoon on each tape. Twist rolls. Optional dressing strip green onions and decorate with mint leaves.
The food is ready! Can be a bit cool her in the fridge before serving.
