Beans, baked with vegetables
In the post no bean can not do. And just so the beans are delicious, nutritious and healthy. Lima and still crisp as a potato. Cook sometimes baked in Greek style. Flavorful, a little tangy, a little sour, such beans are very tasty cold. You can offer it as a side dish, but also as an independent snack good anytime.

Ingredients

  • Beans

    2 cup

  • Onion

    1 piece

  • Carrots

    1 piece

  • Pepper green

    1 piece

  • Tomato

    4 piece

  • Sundried tomatoes

    4 piece

  • Olives

    10 piece

  • Garlic

    3 tooth

  • Tomato paste

    1 Tbsp

  • Vegetable oil

    2 Tbsp

  • Lemon juice

    1 tsp

  • Sugar

    1 pinch

  • Salt

    1 pinch

  • Basil

    1 pinch

  • Savory

    1 pinch

Cooking

Soak the beans in cold water for 4 hours.

Then pour fresh water and cook until soft –about 40 minutes on medium heat. Drain in a sieve and dry.

Peel the vegetables and slice. Thinner and smaller the onion, the carrots into thin slices, pepper corner, olives in half, fresh tomato slices, and sun dried-julienne.

To put beans in a ceramic form, on top of the carrots and peppers, garlic, sun-dried tomatoes and olives. Season with salt and pepper.

Onions fry in a spoon of oil, add the tomato paste, a pinch of sugar, lemon juice and saute until oil staining in red. Put the hot onion on top of vegetables. Arrange the slices of tomatoes, sprinkle with Basil and savory.

Bake at 180 degrees until Golden brown.

Serve hot immediately or allow to cool and infuse. I prefer the cold version.
