Terrine of broccoli
Offer the option of light, the maiden fare - a gentle cloud of cream and broccoli color delicate young greens, a nice creamy taste, quick to prepare and low products! Help yourself!

Ingredients

  • Broccoli

    300 g

  • Gelatin

    8 g

  • Cream

    200 ml

  • The broth

    50 ml

  • Salt

  • Nutmeg

    1 pinch

  • Yolk egg

    1 piece

  • Pepper white

    1 pinch

Cooking

Boil broccoli in boiling salted water for a few minutes so florets become tender, but not lost elasticity.

50 ml of broth pour into a separate bowl, cool slightly and add instant gelatine of good quality, mix well.

A large part of the inflorescences grind to puree shaped state, leave for decoration.

Cream (fat content 23%) pour into a saucepan, add the yolk, beat with a whisk and with constant stirring cook until thick (do not boil!).

To the cream add the mashed cabbage, broth with gelatin. Bring to taste by adding salt, white pepper, grated nutmeg, stir and warm on low heat but do not boil!

Ready Foundation pour into portioned molds.

Put the boiled broccoli florets, put it in the refrigerator to cool completely!
