Description
This is a very delicious recipe for baked eggplant. Served chilled. Can be used instead of feta cheese, but with cheese tastes better, especially if it's salty and greasy, the eggplant lends an unusual flavor.

Cooking
Eggplant wash, peel, cut into strips. Salt the eggplant and put aside until you stand out juice.
Cut onion into half rings
In a pan heat oil, fry the onion. When the onion is Golden, add the chopped tomatoes, salt, sugar 2 pinches and simmer 10-15 minutes.
When the eggplant let the juice, squeeze them and spread on a greased baking sheet. Bake in the oven at 220 degrees until Golden brown.
In a baking dish put layers of baked eggplants, fried tomato, onion and cheese, the last layer should be cheese.
Put into the oven for 20-30 minutes at 200 degrees.
