Baked eggplant in the marinade in Spanish
This recipe for baked eggplant read in the journal "Collection of recipes" about 3 years ago. and just yesterday cooked. It turned out tangy, spicy appetizer. For eggplant lovers, this is another variety in the preparation of such a useful vegetable.

Ingredients

  • Eggplant

    2 piece

  • Garlic

    5 tooth

  • Lemon

    1 piece

  • Thyme

    2 tsp

  • Olive oil

    100 ml

  • Black pepper

    0.5 tsp

  • Salt

    1.5 Tbsp

Eggplant cut into slices 1 cm salt well and leave for 30 minutes. peel garlic, lemon squeezing the juice.

After 30 minutes wash the eggplant, Pat dry, finely chop the garlic, a few sprigs of thyme finely chopped.

Mix the lemon juice, thyme, olive oil, salt, pepper. Lubricate each slice with 2 sides with olive oil with a brush or just hands.

On a heated pan put the eggplant. I pan not greased, and bake (roast) until tender, with 2 sides.

Put into a bowl ready eggplant and pour the prepared marinade. A good shake out and put in the fridge overnight.

Served with hot potatoes, or just with some bread. Delicious!
