Panna cotta
Delicate and airy snack made from green peas and broccoli with spices, cream and gelatin

Ingredients

  • Peas

    150 g

  • Broccoli

    150 g

  • Milk

    100 ml

  • Cream

    100 ml

  • Chicken egg

    2 piece

  • Curry

    0.25 tsp

  • Nutmeg

    0.25 tsp

  • Gelatin

    10 g

  • Black pepper

  • Salt

Peas OREGON green split TM"Mistral" rinse and cook until tender (35 minutes), then drain in a colander. Boil broccoli until tender for 10 minutes-I boiled for a couple. Eggs boil until tender, cool in cold water

Soak gelatine in 100 ml of cold boiled water and leave to swell (I have 40 minutes)

In a bowl put the ready peas, broccoli, add spices, milk. All grind using a blender to puree

In swollen gelatin pour the cream, stir and heat to dissolve the gelatin, but do not boil! I put in the microwave for 1 minute at a power of 750 watts. The resulting mixture was poured into previously prepared puree, season with salt to taste and mix well

Eggs cut in half-yolks to grate and leave aside. The remaining proteins can be used at your discretion, or by the desire to fill purée

The remaining puree to pour kremanku or vases. Half of the eggs and bowl to put it in the fridge to harden (I usually freeze for 1 hour).

Then sprinkle with grated egg yolk

Frozen half the eggs can be cut in half and sprinkle with grated egg yolk.
