This appetizer I recently tried at my mom's. To say that I liked it - to say nothing! Tasty, juicy... With a glass of cold vodka - at the time! All lovers of pig's ears dedicated!
Cook the ears add carrots, garlic, peppercorns, Bay leaf and salt for 2-3 hours on low heat. Cool the ears in the broth - they are more juicy. When the ears have almost cooled down, cut the onion in half rings quite thin. Put it in a bowl with a lid, add vinegar, vegetable oil, salt, pepper, I added dried celery. Close the lid and well, well shake this pot. 30 seconds later you get a wonderful pickled onions.
Ears finely chop. Boil an egg "in the bag" - albumen solid, yolk runny. Chop the eggs.
Mix well eggs, onion, and ears. Let stand 30 minutes. Bon appetit!
