Forgotten recipe from an old notebook. At the time, in the 80s, found it in the magazine "Burda& quot;. Prepared in recent times for it is still a schoolgirl, and then somehow hands did not reach.   • Flour

  • Black pepper

Beat in a mixer or a blender all the ingredients for the filling: toasted on a dry pan bread, garlic, parsley, cheese (can be grated in advance, if there is extra time), 2 tbsp oil, salt to taste, raw egg yolks.

The meat is bathed, dried, cut into portions.

Each piece is cut and open like a book, put the filling.

Fasten edges with a toothpick.

Mix salt, pepper and flour for breading. Coat each piece and fry until Golden brown in hot oil.

Fried pieces put in a small pan or griddle, pour a bit of hot boiled water, broth or wine (whatever you prefer). Bring the meat until cooked in a hot oven for about 20 minutes. Served with greens and lemon.
