For this dish you need beef tongue medium size. But I bought two small telecia tongue. The language must be washed thoroughly, fill with water, when boiling - remove noise, add salt, put the peeled onion, carrot celery. Salt to taste and cook at least three hours until tender. When the language is ready place it under running ICE water for a few minutes. Then the skin is removed very easily.

By the time slicing of the language you need to prepare the bread slide. To do this, with bread cut the peel and the pulp being made into crumbs. Softened butter mixed with chopped herbs, soft cheese, garlic and bread crumbs (you can add chopped cooked carrots), all mix well and form a pile on the oval dish.
