Eateries rolls with beef and walnuts
The recipe was inspired me a few years ago in the "dinner Party". Since then, from time to time it is cooked, as it is one of the few dishes where beef is I don't think dry. And on the holiday table, they look good.

Ingredients

  • Lettuce

  • Mayonnaise

My beef and boil until tender. The better the beef, the easier it will be to cook this dish. Ideally, of course, it is best to find veal. But for me it was science fiction.

Now proceed to the most time-consuming step of cooking. Our beef is necessary to "fluff" or "shaggy". For this big piece of beef cut into several smaller ones across the grain and begin to "shaggy" them with a knife. The process is reminiscent of cleaning young potatoes or carrots. We would scrape the thin fiber layer by layer. It is quite tedious and requires some patience. It is because of him I prepare this dish less frequently than I would like, but the result is worth it. In the photo tried to show the process.

Of course, you can just skip the meat through a meat grinder, but the texture of meat then it will be more like pate, and we need to it was airy and cold. The result of our efforts, we get some semblance of meat tow :)

Walnuts peel and chop finely, but not into flour. I put them in a disposable package and was milled with the aid of rocking or back side of a kitchen mallet.

Green onions and dill wash, dry and finely chop.

Prepare the filling for our rolls. I usually use for this, as well as the author of the recipe, mayonnaise. But this time the rest of the filling ran homemade yogurt. Both options I liked the taste, though a bit different from each other, so zealous opponents of mayonnaise can replace it with yogurt. So, combine together meat, nuts, added pressed garlic, chopped onion and dill, salt, pepper, mayonnaise (or yogurt) and mix well.

For the formation of rolls we need a thin pita bread. In this case, I was thin Armenian lavash.
