Cold chicken terrine with tomatoes, asparagus and Basil
Cold terrine jelly with chicken and fresh vegetables. Can be used as a cold snack, as an alternative to "aspic", just more useful and "lightweight" option.

Ingredients

  • Chicken

    0.5 piece

  • Tomato

    400 g

  • Asparagus

    3 piece

  • Onion

    1 piece

  • Garlic

    2 tooth

  • Basil

    1 coup

  • Dry white wine

    350 ml

  • Olive oil

    1 Tbsp

  • Gelatin

    8 g

Sliced chicken fried with chopped onions and garlic.

Add the wine, spices and simmer under closed lid on low heat for about an hour, add salt, pepper, remove from heat.

Soak gelatin in cold water; boil the asparagus (see note*);

Tomatoes for a few minutes, drop it into boiling water and remove the skins; grind the tomatoes and Basil.

Chicken meat separated from the bones, mix with the tomatoes and herbs and spread on a dish with high sides; spread on top of asparagus (whole) length;

The gelatin mix well until fully dissolved with a hot broth in which it was stewed chicken, and cover chicken with vegetables.

The terrine set in the refrigerator overnight until fully cured.
