Syrian pasting
Muhammara - it's incredibly easy to prepare pasta with lots of useful features and an absolutely amazing flavor and aroma, first appeared in Aleppo (Syria), but later gained huge popularity all over the Levant (Syria, Lebanon, Israel, Jordan, Egypt, Turkey, etc.). The main components of Muhammara is usually fresh or dried peppers, walnuts, breadcrumbs and olive oil. Can also add onion, garlic, salt, lemon juice, pomegranate syrup and some spices (e.g., Cumin). Mahameru can be used, spreading on bread or use as a spicy sauce for kebabs, meat, or fish. In restaurants it is often served with mozzarella cheese. Today I want to introduce you to classic restaurant recipe for this absolutely amazing dish.

Ingredients

  • Red sweet pepper

    3 piece

  • Onion

    2 piece

  • Crumb bread

    0.5 cup

  • Walnuts

    0.75 cup

  • Garlic

    3 tooth

  • Olive oil

    7 Tbsp

  • Chili

  • Lemon juice

    0.5 piece

  • Syrup fruit

    3 Tbsp

  • Sugar

    1 Tbsp

  • Salt

    1 tsp

  • Cumin

    0.5 tsp

Before giving the description of this recipe, I want to show you the original version of Muhammara from a Turkish shop. This jar is 2 Euros and is called "Acuka". So Mahameru called in Western Turkey. It is not much different from the original but contains tomato paste and a bunch of preservatives. Home 1000 times tastier and more useful!

We will prepare all the necessary products. Here, I hope everything is clear. I will only add that instead of lemon juice I used rice vinegar. Later I remembered that lemons at home is over. Instead of crumbs from the crackers I used bread crumbs.

The cleaned peppers from partitions, seeds and stem, cut into halves and put in oven. Cook them at 180 degrees for 10-15 minutes.

Pour into the pan 5-7 tablespoons of olive oil. Finely chop garlic and onion, put in hot oil.

Fry on medium heat until Golden brown. By the way, if you want to retain the flavor of garlic, it can not fry.

Grind grains of cumin. If there is no mortar, use a coffee grinder, and if not the cumin, then just don't add it.

Clean ready pepper from the skin.

Add all the ingredients (except the oil and onions!!!) in a blender and grind them. If you fried the onions, then add fresh garlic (2-3 cloves).

Now add fried onions and garlic (with the oil on which we all roasted) in the resulting slurry.

Again turn on the blender and enjoy the result!
