Salad
My native city of Blagoveshchensk located on the banks of the Amur. Border town of Heihe on the opposite Bank. That's why Chinese cuisine is very close to us. Many Blagoveschensk inhabitants, and especially students, know Berlin inside out. Very often we go to China for a weekend of shopping, or just out to dinner. Many Chinese meals, which was adopted by Russians, and get the corresponding Chinese names. One of such dishes is a salad of Heihe, which got its name from the same city. Salad bought quite a lot of popularity both in China and in Russia because it is so simple to prepare. In addition, and delicious. The Blagoveschensk inhabitants will understand me. Dry Chinese mushrooms, we will need half of a pack (we sold in small wrappers) fill with warm water, leave them until they increase in size by 3-4 times. Then drain the water, gently remove solid base and rinse with clean water. Thinly slice

Starch noodles for the salad, pour boiling water for 2-3 minutes. Then rinse with cold water. I cut the noodles in half, so that was not too long but not short, about 5 cm.

Cucumber cut into fine strips. In General, all vegetables should be cut long thin strips. The longer the better. Ideally, you should get vegetable noodles.

Cabbage are cut subtly, gently squeeze, mash with a hand that was juicy, from chili to cut the stalk, remove the seeds, but the peppers are not cut, leave whole. Mix all the prepared vegetables.

In a separate bowl, mix soy sauce (I used TM "Kikkoman"), vinegar (ideally used by Chinese), sugar, a few drops of sesame oil, vegetable oil (in China, only soybean oil) and Chile, all thoroughly and add to vegetables and mix well again. Then add the mushrooms and noodles. Mix well, let stand the salad. The salad should be juicy, with a sweet and sour taste. Therefore, in any case, adjust the amount of soy sauce, vinegar, sugar to your taste. That was not too sweet or too sour)) the salad also should have a touch of pepper, but very spicy dish shouldn't be.
