Cooking
For cooking you can use any costsbuy fish. When I first tried this dish during the Soviet era, there was only Pollock. The fish was just cleaned and cut into chunks (with bones). I have a pink. I advise you to cut the fish into fillets and cut into arbitrarily small pieces, dry with paper towel.
Potatoes and onions clean, cut into: potatoes - julienne, onions - half-rings. Potatoes dry with a paper towel to avoid splashing of oil.
In frying pan, pour vegetable oil heat, put the potatoes, it needs one layer to cover bottom of pan, and roast until tender, turning a couple of times (lid not closing). Remove the finished potatoes on a plate.
On the same oil on a hot pan fry the fish. Fish fry until it will turn brown on both sides, with the lid open.
In the ready the fish put onions, salt, stir. And fry the onion for 2 minutes.
Put fish on top of the finished potatoes.
Eggs with milk, salt and black pepper whisk.
Pour contents of skillet omletes mixture.
Close the lid and cook the dish until tender over medium heat (about 10 minutes). If there are "Islands" neskatishos of the omelet, then with a fork pierce them to the bottom.
The dish is served in a frying pan, once hot, sprinkled with chopped green onions or parsley. Bon appetit!
