Al-kashik
Since childhood, I remember this dish. My mother - Crimean Tatar, it's incomparable cooking. And my grandmother, dad's mother, said - your mom is frugal, and that preparing these little dumplings! Although, actually, it is very hard work!

Ingredients

  • Flour

    300 g

  • Chicken egg

    1 piece

  • Water

    1.5 l

  • Minced meat

    200 g

  • Onion

    2 piece

  • Carrots

    1 piece

  • Tomato

    1 piece

  • Butter

    2 Tbsp

  • Salt

  • Black pepper

Let's start with the preparation of minced meat and dough, count the number of people you intend to feed. In forcemeat add finely chopped onion, salt and pepper. And if you get a lot of dough - do not worry, you can make noodles out of it. Sift the flour, add the egg and knead salted water.

The dough should be of medium hardness. Cover dough, let stand for 7-10 minutes.

Now begin to roll out our dough. If the dough is large and t small, as in my case, it is necessary to divide into 2 parts. Liberally sprinkle the table and the dough with flour, roll out as for noodles.

The rolled out dough is folded like an accordion. On this step, just cut the dough into small cubes, but I do as below, it turns smoother and the same.

Dice the dough, about 2.5 cm.

Then these cubes unfold and put on top of each other layers, but not much, 5 dice is enough. Remove the remaining dough aside and cover.

Again, cut into small cubes 2 - 2.5 cm and decompose.

On each cube to put the stuffing.

Opposite corners together, seal the edges...

... and tie as a handkerchief as dumplings. And so be done with all.

When all is stuck, then you get these little dumplings. Start cooking the broth.

In butter saute the onions, finely sliced.

Then add the carrots, chop finely or as you like.

Add the tomato, finely sliced, or tomato paste. It all fry well and pour hot water. Season with salt and pepper. When carrots are cooked, throw our little dumplings! Cook for 7-10 min.
