Sauce and Caesar salad
Today, in honor of my transition to the sixth level, my daughter cooked with me, one of the options is quite famous Caesar salad. It has many varieties, but the main ingredients are: chicken Breasts, Parmesan cheese, croutons of white bread and anchovies. The highlight of the salad - the Caesar sauce on the quail eggs. Exactly the sauce I want to emphasize in this recipe. It can be used in dressings for different salads instead of mayonnaise or seasoning other dishes or sandwiches. Yes, the salad came out very tasty. I recommend to all!

So let's go. Sauce "Caesar is very similar in principle to the preparation of the mayonnaise, and because he, like mayonnaise, prepared on the basis of raw eggs (in my case, quail), these should need to choose only whole (without any cracks) and be sure to wash up well with soap and water.

Prepare the remaining ingredients. Garlic (1 tooth.) anchovies and finely chop.

Parmesan three on a small grater. If You find Parmesan too, "kozuch" in price or simply unavailable for other reasons, then take another hard cheese you can find. Of course a little different, but not enough to deny myself the pleasure to prepare this sauce and salad.

In the blender split three quail eggs. We can take one chicken, but then the rest of the add twice and, respectively, the sauce will come out twice.

Add to the eggs the anchovies (3 pieces), garlic (1 tooth), juice of 1/4 lemon, 0.5 tsp sugar, mustard, wostershire sauce (the latter is desirable, but if not, then do not add).

Shoot down everything in a blender.

Add a thin stream of olive (or other available to You vegetable oil) until then, until the sauce thickens. 3 quail eggs will take about 100 ml of oil.

Then add the Parmesan cheese and again bring down until smooth.

The sauce is ready. Half of the resulting sauce left for three servings of salad. The other half started on the same day, just sandwiches. Not suggest this sauce to cook in large quantities because it not worth it to store more than 48 hours. From these considerations we DotA and cooked quail eggs, because the chicken in half to share is not very convenient. If all the same want to store longer, instead take lemon juice vinegar (about 0.5 tsp three quail or 1 tsp for 1 egg). Taste will, of course, a little worse, but it will be stored in the refrigerator up to 2 weeks.

And cut cubes. It turned out crackers with a pronounced garlic flavor, crispy outside and soft inside. A very interesting option. Recommend. Such variant of preparation of crackers are good for people with weak teeth or for children with braces (and adults with braces, too, are). Preparing the breast. You can boil, fry, bake in the oven. We chose the next option. One half-fillet we cut into three pieces as follows: cut "tenderloins", taking a bit large, and "large fillets" cut along (through the thickness) into two "steaks". Then marinade for the chicken in soy sauce (about 3 tbsp) for 30-40 minutes. Fry without oil on the grill pan literally for 2-3 minutes on each side.

Finished season with a fillet with two sides with freshly ground black pepper and daubed previously sent through a press garlic. Leave to cool.

Salad tear hands to pieces, removing the thick middle. Arugula is divided into leaves, removing the lower stems.
