For this recipe, the cider was made by my dad. And he knew a lot about homemade wine! In the season of apples, when the garden is literally littered with them - large, small, sweet, sour - a direct reason to take care of that winter evening was warm and pleasant!
Apples are better to clean. If they are very very small and the process threatens to turn into torture - just remove the core. Cut them into halves.
