Prepared eggplant cut into lengthwise thin slices.
Fry the slices in oil on all sides in a frying pan. I do on the sheet in the oven, a good sprinkle of oil
In oil fry onions, add carrots, peppers.
Add the soy sauce, mix well and stand on the fire until cooked.
Prepared prunes cut into pieces. The prunes should be soft. Grind garlic and mix with the cooled vegetable mass. You can do without garlic.
In a convenient bowl lay out a layer of eggplant. On it a layer of vegetables (grease is not needed, because enough oil in the vegetables left)
For vegetables layer of prunes.
Repeat the layers 2 more times. Spread on top of the eggplant.
The cake is ready. Feeding better after aging in the fridge (about an hour)-easier to cut into portions.
