Seitan
Seitan — a product made from wheat protein. Home to all of East Asia. It turns out no similar food rich in protein, which is especially important in the post. And the younger sister is very impressed by the cooking process :).

Seitan is blank. which is used in the future, where could be the meat. I was interested to cook this recipe, quite unusual the cooking process. My bad expectations were not met, the dough is not flowed in the process of "washing", and all turned out delicious, although consistency more like mushrooms and not meat.

Take wheat flour. I took only 300 grams. but it is 1 serving. (Now less than 1 kg. do not cook)

While the dough is standing, boil the broth. (I made simply from spices, but you can use any. Seitan has no taste and is richer than the broth, the tastier it will eventually dish)

The dough "knead" with cold water (just cold enough to make hands feel comfortable, ice water will not improve the result)

It is necessary to squeeze hands in water (it will be milky white), periodically changing the water. As vymeshivanii the dough will be yellowing and become more rubbery. It is washed out of starch and Gluten remain.

After a while, water will become more transparent, and the amount of dough is greatly reduced.

The dough is pressed and cut into pieces. (The stronger the pressed dough, the less porous will be in the end the dish as a small piece is better pressed, then as you wish, I prefer the "rubber" version)

After 30 minutes the seitan will increase in size and float.

Further, the seitan should be stored in a broth (to absorb flavor) and can be used for the preparation of the finished dishes.
