Cooking

step-0
Stale bread soak in milk for an hour before cooking. I was not quite stale bread, so I was able to immediately separate the pulp and soak it before cooking the dough.
step-1
Broccoli divide into florets, cover with water and cook for 15 minutes. Meanwhile, prepare dough: the bread is very good squeeze to separate the crust and leave the pulp. Add the flour, egg yolk, grated Parmesan, salt and pepper.
step-2
Knead a smooth dough (like dumplings).
step-3
With boiled broccoli and drain water. Mash into a puree (can use blender). Add 20 g of grated cheese, mix well.
step-4
Roll out the dough. Cut out squares the size of 7x7 cm
step-5
In the center of each square, spread the stuffing on top of broccoli. Connect all 4 corners of the square as for the manta rays.
step-6
Cook in salted boiling water for about 4-5 minutes.
step-7
Meanwhile, cook gnocchi in a saucepan pour the cream (or milk), add 100g of grated cheese and simmer, stirring well, allow to dissolve cheese.
