Sauce
Molho de piri-piri. Like every true Russian man at home in the fridge will certainly find a jar of horseradish or mustard in a true Russian, traditional recipe, only sniffing you can see the sky in diamonds... and a true Portuguese house always stashed a jar of sauce "Piri Piri". Piri-Piri in Portugal, the so called chili. :-)) Such concentrate is indispensable to prepare the sauce - marinade for a traditional Portuguese barbecue (Churrasco). The classic example of which can serve as a "Chicken Piri Piri". I was asked to give the recipe of this grilled chicken. Fulfilling this promise give me until just the beginning of the recipe. :-) This is akin to the sauce "Tabasco".

Ingredients

  • Chili

  • Olive oil

  • Whiskey

Choose a small glass container for preparation and storage of the sauce. Peppers "Chile" or in Portuguese "Piri-Piri" select the number to fill the capacity by 1/3.

Rinse the peppers under cold water. Dry, better on absorbent paper or fabric. They should not remain any water droplets. Cut the green tails are laid into the prepared jar.

Pestle from the mortar razdelyaet peppers. (The jar is better not to breathe!)

Pour olive oil and add a little whiskey. (1-3 tablespoons, depending on the volume of the selected jar). This sauce is prefabricated ready to use within a week after preparation. Stored in a dark place at normal room temperature up to 1 year. For longer storage loses power, "breathed out". Is one of the main ingredients for making a special sauce for grilling. Sometimes the thrill concentrate used in pure form applying 1 DROP of already cooked grilled meat. Continue to be!
