Tabbouleh
Tabouli is a cold salad from Libya. It is made from bulgur (cracked wheat) or couscous with the addition of a large amount of parsley. There are different types of cakes - for-Libyan, in Palestinian, Armenian, etc. They differ in the addition of one or another ingredient. The word "tabbouleh" from Arabic means "dressed salad". So, I'll show you the recipe for tabbouleh, which is made in France, where a large number of immigrants from North Africa. P. S. the site has a few recipes for "Tabbouleh", but almost all of them are hot, which is different from my recipe, so add your option.

Ingredients

  • Couscous

    1 cup

  • Onion

    0.5 piece

  • Tomato

    2 piece

  • Cucumber

    1 piece

  • Raisins

    1 handful

  • Parsley

    6 sprig

  • Mint

    2 sprig

  • Olive oil

    8 Tbsp

  • Lemon juice

    7 Tbsp

  • Salt

  • Black pepper

The salad can be made the day before serving. To prepare 1 Cup of couscous, pour it in a deep dish.

1 cucumber peel, finely cut into cubes.

Peel the onion and cut into small cubes.

Tomatoes incise cross, pour over boiling water and leave to stand for 1 minute.

Then gently remove the peel, finely chop.

Pour the raisins with hot water and leave to stand for a while.

Add all vegetables and drained raisins to the couscous kusu, mix well.

To prepare the dressing: mix olive oil and lemon juice, season with salt and pepper to taste. Mint and parsley wash, dry and finely chop.

To add to the salad greens and dressing, and stir.

Dish with salad, cover with cling film and leave in the fridge for a day. During this time, the salad will need to stir 3-4 times. And that's all! The salad is ready! Before serving you can add a little olive oil and season with salt, if necessary.
