Cabbage treugolnichki in Azerbaijani
Cuisine of the Caucasus is my special love! Through her I fell in love with all the Mediterranean... unfortunately, I rarely find spices and ability to cook anything from Armenian, Georgian cuisine, but the Azerbaijani was... altogether unfamiliar. Happy to have prepared this dish according to the recipe of Cevoli from Azerbaijan, for which many thanks to her.

Ingredients

  • Cabbage

    10 piece

  • Cheese

    250 g

  • Walnuts

    10 piece

  • Garlic

    2 tooth

  • Yolk egg

    1 piece

  • Butter

    2 Tbsp

  • Sugar

  • Salt

  • Sour cream

Cooking

Boil cabbage leaves in boiling salted water, as the cabbage rolls. Put in a colander or towel, to drain excess water.

Filling. Chop coarsely the walnuts. To wipe cottage cheese through a sieve. I took 0.1% of curd weight, so without this step. Add in cheese and softened butter, crushed garlic, egg yolk, sugar, salt and walnuts. Mix everything carefully.

On each cabbage leaf put the stuffing, roll the triangle.

Fry in butter (I used olive) oil on both sides for a few minutes. First, the parts are laid out seam side down.

Drain off excess fat, put on kitchen towels.

Serve with sour cream or yogurt sauce.

For yogurt sauce: natural yoghurt, salt, herbs and a little garlic (optional).
