Description

Turkish delight
Oriental sweets from starch, lemon and orange juice, flavoured orange and lemon peel, peppermint. In Turkish "Rahat-lokum" means "comfortable for the mouth", as I recall :) Tender... tasty... flavorful cubes, dusted with powdered sugar. My variation on the theme of Turkish delight... the taste and appearance is better than what you can buy in the store.

Ingredients

  • Lemon juice

  • Orange juice

  • Powdered sugar

    3 cup

  • Water

    1.5 cup

  • Orange zest

  • Lemon peel

  • Gelatin

    15 g

  • Starch

    0.66 cup

  • Essence

  • The food dye

Cooking

Everything you need, even two bags of powdered sugar. Food coloring (I have powder) - in a white jar with a conical top.

Mix in a heavy-bottomed pan (preferably Teflon) lemon juice and orange zest (without white layer), the powder and 1/2 Cup water. On low heat cook, stirring occasionally, until the sugar is dissolved. If the sides of the pan are formed sugar crystals, they need a damp pastry brush to sweep down.

When the mixture comes to a boil, reduce heat and cook, without DISTURBING, about 5 minutes (until the mixture, dropped the spoon in cold water will not drain from the spoon long thin strands).

Starch diluted in 1/2 Cup water. Gelatin to dissolve to dissolve in 1/2 glass of water (this is to put the glass in a bowl of hot water).

Add the gelatin and starch mixture in sugar syrup (if the dye is dry, then it needs to be in starch mixture to dissolve first), stir well.

Cook over moderate heat, until the mixture becomes glossy and starts to boil. Add the peppermint.

Form cover with foil and well lubricated with oil. Spread an even layer of the mixture without the crust!!! (easier, of course, to remove them before adding the starch and gelatin mixes, although I had already removed before filling in the form).

To remove overnight in the refrigerator. In the morning, remove foil, cut into cubes and roll in powder.
