Lean mayonnaise with tofu
In the fridge for a long time was the packaging of liquid tofu. Wondering what to cook with it – maybe pad Thai or ice cream? Today I wanted Mayo, but we do not eat. I remembered that I bought in Moscow soy mayonnaise. But as I recall, he was very bold for me and soon I, too, have ceased. So I rummaged through the network in search of a recipe for homemade soy mayonnaise. This seemed to me the most simple, although there are recipes where mayonnaise is made from soy milk. Remember also that Russia is now Post assumption until August 28. Maybe someone else will have time to use it.

Ingredients

  • Tofu

    100 g

  • Vegetable oil

    1 Tbsp

  • Vinegar

    0.5 Tbsp

  • Lemon juice

    1 Tbsp

  • Honey

    1 tsp

  • Mustard

    0.33 tsp

  • Black pepper

    0.25 tsp

  • Soy sauce

Cooking

Squeeze half a pack of tofu (I have soft, sometimes even solid). Well, of course, use homemade tofu if you cook it. Because we sell loose, I'm sometimes too lazy to do yourself.

Add the vegetable oil. I have a sunflower.

5% vinegar – I have a pineapple.

Then squeeze the juice from the lemon. I had lime.

Put a small spoonful of honey, can replace sugar to taste.

Then ground pepper to taste.

Instead of salt, I first added a teaspoon of soy sauce. But then it turned out that too little salt for me and in the end put the usual salt.

And finally, a quarter teaspoon dry mustard. I do not quite understand, the original recipe – some mustard it was meant, so number took a little less than the amount specified in the original (there was a 0.5 tsp.). I thought it was sufficient, if there is little – after whipping add more and mix again.

Now I'll show you how to fix the sauce if it seemed excessive or inadequate. I wanted to reduce the acid and add the salt. If you want to kill the taste of any ingredient, add some more tofu. Then again whisk, taste, add the missing ingredients (I also add salt), beat again.

That's all ready. On Fasting days you can still cook soy goulash recipe is very simple. Take Your favorite vegetables and saute in a small amount of water, broth, serum, then add the pre-soaked soy "meat" (we called it the "textured soy protein" and is available in different forms, in Moscow, too, there is one).
