Zucchini marmalade with ginger
Delicious marmalade! Intense citrus flavor and a tangy aftertaste of ginger - for me it's just amazing. Zucchini is not mushy, but stays crunchy pieces.

Ingredients

  • Apple

    1 piece

  • Ginger

  • Lemon

    2 piece

  • Zucchini

    5 cup

  • Sugar

    4 cup

  • Orange

    2 piece

Put the grated zucchini in a large pot in which to boil the marmalade.

Using a knife for cleaning of vegetables, remove the zest from oranges and lemons.

Finely chop it and add to zucchini. You can simply RUB the peel on a grater.

Peel the lemons and oranges from the remaining peel and white pith, remove seeds. The peel and pith and tie in a large gauze bag.

Grate the ginger on a grater and tie it up in a separate gauze bag.

Finely chop oranges, lemons and Apple, add everything into the pot with the zucchini.

Put on medium heat, add the sugar, bring to the boil and complete dissolution of sugar. Add the bags of seasonings, reduce heat and, stirring, cook for 45 minutes.

Of the finished marmalade, remove gauze bags, pour it in hot sterilized jars, roll up lids. Closed banks sterilize in boiling water for 10 minutes.
