Pasta with eggplant sauce
Recipe excerpted from the book "Watching my weight!" Another option, as you can eat to vary our diet. Eggplant with traditional cooking absorb much oil and are megacalorie dish, in our case, one serving contains only 135 calories.

Ingredients

  • Eggplant

    1 piece

  • Tomato juice

    300 ml

  • Garlic

    2 tooth

  • Basil

    2 Tbsp

  • Pasta

    120 g

  • Parmesan

    30 g

  • Spices

Eggplant peel, cut into cubes, garlic we grind, greens finely chop.

Mix in saucepan, eggplant, herbs, garlic, salt, pepper and add tomato juice. Bring to the boil and leave to stew for 15 minutes or until fully cooked.

Boil our favorite pasta (durum) until tender in a large number of slabosolenym water.

Return the pasta to the pan, mix eggplant with pasta
