Squid rings in tempura with caviar sauce
A quick and delicious hot appetizer. Perfect for a holiday table or family dinner.

Ingredients

  • Squid

    2 piece

  • Caviar

    100 g

  • Sour cream

    3 Tbsp

  • Mayonnaise

    3 Tbsp

  • Flour

    4 Tbsp

  • Chicken egg

    1 piece

  • Vegetable oil

    1.5 cup

  • Vodka

    2 Tbsp

  • Milk

Squid thaw, wash. Pour over boiling water, remove the film.

Cut into circles about 1 cm.

In a deep bowl mix the egg, flour, sour cream, 1 tbsp vegetable oil, and vodka. Add 3-4 tbsp of milk. The batter should be as for pancakes-pancakes. Do not add salt!

Squid roll in flour, this will allow the batter to stick well, dip in batter, fry in well-heated vegetable oil until zolotisty. I cooked in a skillet. To hand hold the skimmer after each finished portions should be collected scraps of dough from the surface of the oil, otherwise it will burn.

Caviar to the sauce, mix the cod ROE, mayonnaise and sour cream in proportion 1:1. To taste, I got a very salty caviar, I had to add a little more mayonnaise and sour cream.

Rings should be served hot, but cold they are also delicious with this sauce.
