Lasagna Alla Bolognese/Lasagne alla bolognese
This recipe is from the book Ella Martino. After reviewing it, I realized I needed to do it. I really liked the lasagna, juicy and delicious. It is a beautifully decorated Easter table. This is my 190th recipe!

Ingredients

  • Flour

    250 g

  • Chicken egg

    2 piece

  • Spinach

    100 g

  • Salt

  • Broth

    180 ml

  • Milk

    560 ml

  • Ham

  • Minced meat

  • Tomatoes in own juice

    250 g

  • Onion

  • Carrots

    1 piece

  • Celery root

  • Nutmeg

    1 tsp

  • Black pepper

  • Parmesan

  • Butter

Cooking

First prepare a stew for lasagne, it has to be done in advance. Peel the onion, carrot, celery, chop the pancetta. Young beef grind in a meat grinder. Chopped vegetables fried with ham. Increase the heat to high and put the meat. Fry until Golden brown.

Fry until Golden brown. Pour in the wine and simmer until alcohol has evaporated. Add the chopped tomatoes in own juice, salt, pepper, nutmeg. Bake for another 40 minutes. Stir in the milk. Bake for another 30 minutes. The stew is ready!

Now is the time to prepare the Bechamel sauce. Butter fry flour. A thin stream pour the milk. Stirring constantly, add salt, pepper, nutmeg, cook until thick.

Prepare the spinach for the dough. Spinach dip in boiling water and cook for 3 minutes. Cool. Press and chop in a blender.

Sift the flour, add the eggs, salt, spinach and butter. Gradually knead the dough. Knead until smooth 20 min. Wrap with film and leave to chill for 30 minutes.

When everything is ready for cooking lasagna, mix ragu and Bechamel sauce. A bit of Bechamel sauce I will leave to pour at the bottom of the form. The first sheet of lasagna to put on it, and lubricate sauce the top sheet of lasagna before baking. Separately grate the Parmesan cheese 60 g for the topping.

Unroll the dough.

Cut into pieces the size of the form.

Leaves to boil for 2 minutes in boiling salted water. Then in cold water in a colander.

The bottom of the form lubricated with Bechamel sauce. Put a sheet of lasagna. Put the stew and sprinkle with grated Parmesan cheese. So to the top of the form. The top layer and spread with Bechamel sauce and sprinkle cheese. Cover the form with foil and bake for 20 minutes at 180*C Then remove the foil and leave for another 20 minutes.
