Easter cupcakes
On the eve of Easter I want to share with you my favorite recipe of cupcakes. Cakes this recipe came out extremely tender and tasty, like real cakes! Well design, themed accordingly ;) the Kids will be absolutely delighted with this Easter dessert!

In order to obtain mouth-watering cupcakes, it is very important that all the products for the test were exactly the same at room temperature! so be careful about it and let your butter, powdered sugar, milk, eggs and flour to lie down at room temperature for 4-6 hours. If they are of a different temperature, or cold, good structure biscuit dough will not work since you can't create a good soluble oil - based dough. Butter and powdered sugar to whip with a mixer on medium speed white to light cream. It will take about 8-10 minutes. Then one spoon, without stopping whisking, add the stirred eggs. It will take another 4-5 minutes. Should get lush homogeneous emulsion-cream.

Add the cream three times (!) sifted together with baking powder and fine salt, flour and milk, a pinch of vanillin or a few drops of vanilla essence and mix into the batter on lowest speed of mixer.

Spread the batter in the molds for cupcakes. This amount of dough is for 12 standard cupcakes. Do not fill more than 3/4 (better half), because cakes rise much in the baking process.

Bake the muffins at 200C for about 20 minutes until cooked (check with a wooden splinter, she needs to get out of the cake dry). Cool.

For cold cream, beat the mascarpone with the icing sugar and a pinch of vanilla. Beat gently on low speed of mixer - not to overwhip it and get the oil. You can tint the cream with food coloring. As a natural green dye you can try pistachio paste, matcha tea, juice spinach or parsley. And you can do without coloring cream, it does not matter!

The cooled cupcakes, decorate with cream. For pot use a nozzle with a small hole.

In the nests or on the grass laid the mini eggs. The role of the testicles is possible to use a mini kinder, nuts and berries in chocolate icing, multicolored marmalade oval. You can personally slap the testicles of marzipan and paint them in desired color. Prior to the filing of cupcake store in the refrigerator!
