Confit of cherries and red onion
Long was going to make onion confit, but did not dare, but in vain. It is an interesting snack which is served with cheese, poultry, liver or use as a filling in a cake.

Ingredients

  • Cherry

    250 g

  • Red onion

    250 g

  • Brown sugar

    2 Tbsp

  • Chili

    0.2 piece

  • Vinegar

    1 Tbsp

  • Water

    200 ml

  • Olive oil

    2 Tbsp

  • Butter

    1 Tbsp

  • Cinnamon

    1 piece

  • Salt

    0.25 tsp

Cut the onions very thinly, I prefer strips.

In a thick-walled pan heat the oil, add the chopped onion and cook for about 10 minutes until transparent, avoiding the burning, stirring occasionally.

To the onions add the cherries, cinnamon stick, chili pepper a bit (I cut off 1 cm from the pepper), salt, sugar, balsamic vinegar, fill with water, simmer 45 minutes on low heat under a closed lid, stirring occasionally.

The onions should be dark and almost like jelly.

Of the ingredients turned out a little more than half of the 300 gram jars.
