Escabeche of mackerel
Escabeche de caballa. There have been several recipes for escabeche, but my different way of cooking and a lot less effort. Cooking a rapid, and then you just have to wait a few hours until the fish marinated.

Ingredients

  • Garlic

    1 tooth

  • Onion

    1 piece

  • Olive oil

    75 ml

  • Lemon peel

    0.5 piece

  • Orange zest

    0.5 piece

  • Thyme

    1 piece

  • Bay leaf

    1 piece

  • Wine white semi-dry

    5 Tbsp

  • Vinegar

    5 Tbsp

  • Mackerel

    1 piece

  • Salt

  • The mixture of peppers

Cooking

Mackerel cut along the backbone and remove the backbone and ribs.

Cut into 4 slices each fillet, season with salt and pepper.

In a pan pour 75 ml of oil, garlic, cleaned, cut into slices and fry in oil.

Add to garlic.

Add the zest of lemon and orange, thyme, Bay leaf.

Add the vinegar and wine, bring to a boil.

Put the mackerel in the marinade.

Bring to a boil and turn off. Cover and leave to cool. You can start trying after about an hour, but it is best after 5-6 hours.

Serve with fresh salad in a warm or heated state.
