Khachapuri
I must say that for me these khachapuri - memories of childhood. Sure the original recipe did not look, but my version is a delicious alternative. And if you are lucky enough to find true stone, then your house will be a small celebration! In the eighties, sad to say, the last century, my family lived in Tbilisi. I was a little girl and my memories of this lovely ancient town jerky, but bright as all childhood memories. It was in Tbilisi one small cafe in the city centre, where trained video cameras, and it was called "Lagidze Waters". To taste khachapuri, had to defend a long line which ended right on the street. The cafe was in the basement, with a beautiful marble staircase down. Huge on the countertop next to the cash register brought trays with square khachapuri and laid out on plates. Delicious khachapuri, of course, I never ate.

  • Sugar

  • Yolk egg

    100 ml

  • Flour

    1100 g

  • Salt

  • Chicken egg

  • Egg white

    2 piece

Serum is a little heated. Add the yeast, sugar, mix and leave for 10 - 15 minutes until foamy cap.

In a bowl, where you will knead the dough, sift 500 g of flour. Add salt. Pour in the yeast mixture and mix thoroughly. I did it with a spoon. Two yolks and cream add to the dough, stir. Proteins remain to lubricate the khachapuri.

Gradually introduce the remaining flour, knead a soft smooth dough. Flour pour gradually, it may need less or more. The dough cover with a towel and leave to come for 1-1.5 hours.

For the filling cheese grate on a fine grater, add three eggs, stir. Cheese I had Armenian brine Vats and Lori, it is quite salty, so filling I'm not salted.

The dough is quickly coming, it grows and increases in volume. I'm 1.5 hours obmanula it twice.

You can divide the dough into 8 pieces and from them to form khachapuri, I acted differently. Split the dough in half. Each half unrolled thickness of about 1.5-2 cm and divided into 4 conditional quadrants. So it seemed to me easier.

From the dough form a square, spread on 2 tbsp filling

Folded edges on all four sides, carefully zasiyaet edges so that the filling doesn't run out.

Put khachapuri on a baking sheet, greased with vegetable oil. Lubricates the edge of the protein and leave for proofing for 10 minutes.

Bake in a preheated 180 degree oven for 20 minutes. Then take it out, do the spoon recess in a cheese filling and break an egg. Bake another 7-10 minutes, until the egg has set. Served hot!
