Traditional pastries for Clean Monday, it is the name of the first day of fasting, is the Lagan, which they eat instead of bread. On the website there are 2 version of this pellet, but I want to share one. This is the recipe of famous women chefs Argyro Barbarigo, whom everyone called by her name, and once it is clear you are talking about. This recipe I got last year and so I liked that the Lagan I bake not only for tomorrow, but just the other day. To work with the dough - a real pleasure!

Ingredients

  • Flour

    600 g

  • Water

    300 ml

  • Olive oil

    100 ml

  • Yeast

    8 g

  • Salt

    1 Tbsp

  • Sugar

    0.5 Tbsp

  • Sesame

    50 g

In a small amount of warm water (about 100 ml) dilute the yeast with the sugar. Leave for 5-10 minutes until a "cap".

The remaining water (200 ml), olive oil, salt stir. Adding a living yeast and flour. Knead the dough. You can do it in the bread maker, mixer nozzle-hook or very carefully by hand. The dough should not stick to hands. Cover the dough and leave for an hour in a warm place.

After an hour our dough went well and increased in size. Preheat the oven to 200 degrees, with the convection.

Divide the dough into 3 parts. I did a double batch, so the table 6 pieces.
