Cake
Easy cheese cake with strawberries, lime and mint soufflé. Not cloying and very sweet. I want to give this recipe to all the participants of the action "Coloring& amp;quot; and culinary weeks "Cooking together". With all my heart I want to thank you for the warm fellowship and the friendly atmosphere.

Ingredients

3 eggs, 2 yolks, four tablespoons of sugar and flour knead the dough (to taste you can add 1 tsp of mint liqueur and the zest from half of lime). Add the baking powder, spread in the prepared form (diameter 26 cm) and bake at 200 degrees until cooked. Ready cake cool.

Interrupts with mint leaves, add to them the juice of half a lime and 3 tablespoons of water, shred everything in a blender or chopper.

Wipe the strawberries with 2 tablespoons sugar.

With two limes, remove the peel using a fine grater and squeeze out the juice, mix it with the zest and 2 tsp sugar.

Gelatin soaked in 300 ml of water, dissolve according to instructions on the package. Curd mix with sour cream and 4 tbsp sugar to the curd mass was more uniform grind it in a food processor with knife.

To the pureed strawberries, add 1/3 of the cottage cheese mixture and 1/3 of the diluted gelatin, mix thoroughly. On the dish lay out the cake, put a Board from the split form and spread on top of cake with strawberry mixture. Put into the fridge for 30 minutes so that the mixture "grabbed".

In the remaining 2/3 of the cottage cheese mixture, pour the juice and the lime zest, and 1/3 diluted gelatin. Gently spread on top of strawberry layer. Remove again in the fridge.

Take 2 protein, mix them with 4 tbsp sugar until stable peaks, add the chopped mint and the last third of the dissolved gelatin, mix well and spread on cake.

Remove the cake in the refrigerator for at least 4 hours so all the stuffing is frozen, and better at night. Before serving, gently hold the knife along the sides of the form, remove it and decorate the cake as desired with strawberries, mint leaves and lime wedges.
