Omelet reapers
Omelette des moissonneurs - dish Provencal rustic kitchen. Took him out in the field, put between two slices of bread.

Ingredients

  • Onion

  • Vinegar

    75 ml

  • Chicken egg

  • Milk

    2 Tbsp

  • Olive oil

    2 Tbsp

Very simple, delicious recipe. On the eve peel 2 onions, stick a clove.

Put in a bowl, cover with vinegar. If the bulbs are not fully disappeared, add water. Cover the bowl with a lid or foil, place in the refrigerator to marinate at least 12 hours.

The next day remove the onion from the liquid and remove the cloves. Thinly slice the onion half rings. Heat 1 tablespoon of olive oil in a pan and fry onions for 15 minutes on low heat. Season with salt and pepper. Put onions aside.

Break the eggs into a bowl, pour the milk, salt and pepper.

Whisk the mixture with a fork until it starts to foam a little.

Grease a pan a little olive oil, pour eggs and cook on one side. On one half of the omelet put the onion and cover the other.
