I had been eyeing this recipe in the magazine "Hits the blanks", but somehow hands did not reach. And today my husband made the same. What can I say? Very tasty, spicy, something like eggplant caviar (well, or another option), quickly and, by the way, without vinegar.

Cooking
The recipe is so simple that just needs step by step photos. Eggplant always soaked for half an hour in salted water (1 litre water 1 tbsp salt), pre-cut into circles. Onions finely crumble, and all the other vegetables, eggplants and apples are crushed in a blender (as an option of a meat grinder). All joined in a large saucepan.
Added oil, salt, sugar and put on fire. And here's the catch. The recipe stated that after boiling, simmer 35 minutes on low heat. We were extinguished for half an hour - all it seemed that the vegetables raw. Maybe due to the fact that some of the eggplant got hardish. But in the end it turned out yummy. We spread out in hot sterilized jars, rolled and wrapped, and that did not fit - was eating for both cheeks with some bread. The yield of this amount to 7 liters
