Cooking
Onions cut into half rings, pickled cucumber strips. Cucumbers have to be salted! Not sour and certainly not pickled!
Saute the onion in 2 tbsp very hot oil until soft. Add a good tomato paste ( preferably homemade ) and cook for 3 minutes. Add sliced cucumbers and sugar. Cook 2 minutes, stirring occasionally.
Put the vegetables in the hot broth, bring to a boil and simmer for 10 minutes
Sausage and meat from chicken legs cut into strips
Fry in the remaining oil for 3 to 5 minutes. Add to soup along with the olives and capers. Add salt, pepper, add the brine, Bay leaf and simmer the soup on low heat for another 10 minutes.
