It's the season for eggplant. No one doubts the benefits and taste of this wonderful vegetable. I propose another version of the salad. It's simple and very satisfying. It can be not only snack, but a full second course.

Cooking
Remove skin and cut into cubes 2 medium eggplant.
Fry in vegetable oil eggplant. Actually, I don't even fried and stewed, adding in the pan the water, so it was not greasy.
Boil eggs and finely chop.
Very finely chop one small onion and fry in vegetable oil. Combine all the ingredients, season with salt and pepper to taste and dress with mayonnaise.
