Winter citrus salad with quinoa
Interesting recipe for a winter salad that will give you many vitamins that are so necessary in the cold season! The salad harmoniously combines avocado, pomegranate, citrus and cereal quinoa. This grain, in addition to a variety of nutrients, contains more protein than all other grains! Moreover, this protein contains all essential amino acids, which is quite rare among plant foods. Also, quinoa is rich in phosphorus, folic acid, potassium and iron.

Ingredients

  • Quinoa

    70 g

  • Salt

  • Orange

    1 piece

  • Grapefruit

    1 piece

  • Avocado

    1 piece

  • Garnet

  • Orange

  • Cilantro

Thoroughly rinse quinoa (went to the bitterness) and put in saucepan. Pour water and add sea salt. Bring to a boil and cook for 20 minutes on low heat. Remove quinoa from heat and allow to cool.

Oranges and grapefruit, divide into segments, remove the membranes and finely chop. Avocado peel and cut into small cubes. Wash the pomegranate peel.

In a bowl put quinoa, slices of orange and grapefruit, cubes of avocado. Mix well.

Add the pomegranate seeds. Mix well.

Prepare a seasoning. Orange wash, peel, divided into slices, remove the membranes and put in a blender along with cilantro (instead of cilantro I used parsley). Beat on low speed until smooth. Pour salad dressing.
