Persian rice cookies
This is an unusual Oriental sweet, which is prepared from rice flour. Very simple and easy recipe, tasty and crumbly biscuit. From one portion of dough makes about 40 cookies. I invite you to treat yourself!

For biscuits, I chose the rice cultivar "Jasmine" from TM "Mistral"

If You don't have rice flour You can easily make it yourself. So, grind rice in a coffee grinder or blender. Then the prepared flour must be sifted through a strainer.

Mix all the dry ingredients

Add the egg, softened butter, ground cardamom (optional, can be without it) and knead the dough. Spread the dough on a flat surface and carefully knead it. Cover the dough with film and leave to rest for 1 hour.

The original cookies made in the shape of a Crescent, I have not found the right shape and I made in the form of lepeshechki. The cookies spread on a baking sheet covered with baking paper. Grease cookies white and sprinkle with chopped pistachio nuts (not salty), which by the way, I forgot :) Bake cookies in a preheated 180 degree oven for about 15 minutes.
