Cookies with marshmallows
Beautiful cookies, its very interesting to cook, especially with children. Can be used as a sweet gift. I gave the cookies to friends for the New year.

Ingredients

  • Butter

    250 g

  • Sugar

    100 g

  • Flour

    225 g

  • Rice flour

    90 g

  • Ginger

    2 tsp

  • Marshmallows

    16 piece

  • Coconut shavings

    2 Tbsp

Cooking

Preheat the oven to 180 gr. Two baking vystelit baking paper. With a mixer beat butter with sugar until light in colour and creamy.

Mix the flour, rice flour and ginger.

Add to butter mixture and mix with a mixer until the dough only just "met". Then, on the surface, slightly floured, knead dough until smooth and smoothness. Form a 2 disc, wrap in cling film and refrigerate for 20 minutes.

Roll out half of dough between two sheets of baking paper to a thickness of 5 mm. Molds cut out cookies.

Transfer the cookies on a baking sheet and cut a circle in the middle.

Bake for 10 - 15 minutes until light Golden brown.

The same procedure, except for cutting out the Windows, repeat with the second part of the test.

The number of marshmallows that we need depends on the size of a marshmallow, which you will get. The recipe requires 16 pieces, cut in half, I had 8 large, cut into 4 pieces.

When an integer (without window) cookies has finished baking, remove the pan from the oven and each cookie place a piece of marshmallow.

Send in the oven for a few minutes so marshmallows are softened. On top sprinkle with coconut.

Cover the biscuits with a window, lightly pressing down. Allow to cool completely.
