Warm salad of eggplant and green beans
In the hot season not too interested in spending a lot of time at the stove, hence was born the many options of quick and easy dishes. This warm eggplant salad is a vivid example of how with minimal physical and time consuming to cook a delicious vegetable dish. Also suitable for vegetable, dietary and vegetarian nutrition.

Ingredients

  • Eggplant

    2 piece

  • Sweet pepper

    1 piece

  • Leeks

    1 piece

  • Beans

    150 g

  • Garlic

    2 piece

  • Sprouts

    50 g

  • Olive oil

    2 Tbsp

  • Honey

  • Soy sauce

  • Black pepper

  • Vinegar

Cooking

Eggplant wash, cut into large cubes, sprinkle with salt, that would be "gone" the bitterness and leave for 15-20 minutes (this time in preparation are not included as peacefully lying in a plate of eggplant not prevent us to do their business); a leek cut into rings; chop the garlic; beans have to cut off the ends; salad pepper peel and cut into cubes.

Heat well a frying pan with high sides (or a wok) and put baklajany, beans, garlic, pepper salad and leeks and simmer with olive oil for about 10 minutes, stirring occasionally.

Add soy sauce or salt (a little as the eggplant is already salt), honey, hot pepper, vinegar, soy sprouts and simmer, stirring a few more minutes. Remove from heat and serve.
