Syrdak eggplant
This dish of Azerbaijani cuisine is simple and quickly prepared, and the taste of his mesmerizing and leaves no one indifferent.

Ingredients

  • Eggplant

    4 piece

  • Tomato

    6 piece

  • Garlic

    4 tooth

  • Parsley

    1 coup

  • Vegetable oil

    100 ml

  • Turmeric

    0.5 tsp

  • Salt

  • Black pepper

1. Eggplant peel and cut into thick slices. Sprinkle with salt, let stand, rinse and lay out on a towel for drying.

2. In a pan heat oil, add turmeric, stir and fry the eggplant.

3. Tomatoes grate. Grind the garlic, parsley finely chop. In a saucepan put tomato mixture, heated and boil over medium heat for 4-5 minutes.

4. Add to the pan the garlic and roasted eggplant, salt, pepper and simmer on medium heat for 10-15 minutes.

5. Serve the dish can both hot and cold, sprinkled with chopped parsley and garnish with a sprig of Basil. BON APPETIT!
